How to Use Lemon Balm in Cooking



Culinary Uses For Lemon Balm

Due to increase of health consciousness and discovery of lemon balm high medicinal qualities, lemon balm has gradually gaining its popularity. But, do you ever think of using lemon balm in your cooking?

Lemon balm exudes a very refreshing lemon fragrance and it has a mild lemon flavor. We usually prefer fresh lemon balm leaves instead of dried leaves when we use it for cooking. Dried lemon balm tends to lost some of its flavor during the process of drying. Lemon balm is easy to use and it works well in all recipes that combine with other herbs such as rosemary, chives, basil, mint, pepper, thyme and etc. Below are few yummy ideas for how to use lemon balm in your dishes and beverages:-

  1. Lemon balm fresh leaves can be used as garnish to decorate your food.
  2. To add lemony zest to grilled chicken and fish dishes, simply chop lemon balm leaves and then toss them over the dishes.
  3. Shred lemon balm leaves and mixing with mayonnaise. Then, adding them to freshly boiled new potatoes with freshly cooked broad beans and peas or freshly steamed veggies or mixed fresh fruit to make a delicious salad.
  4. Boil lemon balm leaves with water and honey for cups of refreshing lemon balm tea .
  5. Add in lemon balm for flavoring foods, drinks and desserts such as cake, egg dishes, fruit drinks, custards, cookies, puddings, sorbets, a variety of soups and etc.
  6. Lemon balm with combination of other herbs is an important ingredient in herbal liqueurs, such as ‘Chartreuse’ and ‘Benedictine’.
  7. To add more flavor, you can also add lemon balm essential oils in your cooking. For better results only add lemon balm essential oils at the end of cooking. If you add them during the cooking process, long heating process will vaporize the contents of essential oils and they become less potent.
  8. Use lemon balm to make Lemon Balm Butter



  • 2 tablespoons finely minced lemon balm
  • 2 tablespoons finely minced thyme
  • 1/8 teaspoons of finely grated lemon zest
  • 1 cup of butter


  • Soften the butter and then cream the butter (by using blender or mixer)
  • Mix minced lemon balm with minced thyme and then combined with the butter.
  • For more flavour, add in finely grated LB cooking2lemon zest.
  • Add in a salt or pepper to taste and stir it well.
  • Cover it and let it chill for at least 24 hours. The longer it chills, more lemony flavors will blend into butter.
  • Store it in a jar with a tight-fitting lid and keep it in the refrigerator. The shelf life is around 7 to 8 weeks.

Lemon balm butter can be used to flavor meats, seafood or veggies.

9. Use to make Lemon Balm Vinaigrette


  • 1 tablespoon of minced fresh lemon balm leaves
  • 6 tablespoon of extra virgin olive oil
  • 2 tablespoons of white wine vinegar/ red wine vinegar/ balsamic vinegar/rice wine vinegar (any one)
  • 2 tablespoons fresh lemon juice (optional)
  • A dash of salt, a little grated garlic or ginger (optional), fresh black pepper and chilli sauce (optional) to taste


  • Combine all the ingredients with vinegar of your preference.
  • Slowly whisk in the oil.
  • Mix well and set aside for 15 – 20 minutes before serving.

Tips & Notes

  • The general guide is using the ratio 3 oil to 1vinegar. But, you can adjust according your preference.
  • Vinaigrette can be used to marinate poultry or fish before cooking. But, for food safety, do not reuse the vinaigrette.
